Sift in the dry ingredients, then add the buttermilk and mix until well combined. Cover the bowl of batter with plastic wrap or a tea towel and allow to rest for 30 minutes. METHOD In a mixing bowl, whisk castor sugar and eggs,then add oil and vanilla essence. Sift dry ingredients flour, add pinch cardamom and cinnamon, if using black raisens add to mixture followed by buttermilk and give it a quick light mix. Drop dessertspoon into hot oil and fry golden brown. Whisk together the flour and baking powder, then add in the spices, put that bowl aside for now. Using a stand up food mixer (I used my Kenwood) attach your whisk, and whisk together the eggs, sugar and melted butter, until the colour becomes lighter.
